USA celebrity chef gives allergy advice for food service staff

Celebrity chef Ming Tsai is chef-owner of Blue Ginger restaurant in Massachusetts, USA which caters for people with severe food allergies. Tsai is also a spokesperson for the Food Allergy & Anaphylaxis Network (FAAN) and is said to be passionate about increasing awareness and improving restaurant systems so people with food allergies can eat out safely. With a son who has multiple severe food allergies, chef Tsai has first-hand experience of trying to eat out with the fear food allergy.
The Children’s Hospital Boston has posted a videoed interview of chef Tsai speaking about the importance of training staff to avoid cross contact of foods in the kitchen and being able to assure allergic consumers of the safety of foods prepared for them. He draws a comparison between the precautions needed when preparing a raw chicken, with those necessary when preparing food for allergic consumers.The video can be accessed from the following link:
