Paper published about amount of gluten tolerated by wheat allergic and coeliac individuals

A paper published earlier this year looks at the estimated maximum amount of gluten tolerated by both wheat allergic and coeliac individuals.

Hischenhuber et al. (2006) reviewed literature to evaluate whether an upper limit for gluten content in food, which would be safe for sufferers from both diseases, could be identified.  For more information on this review, please contact us.
