New method for the detection of peanut allergens

Scientists from the US Food and Drug Administration's laboratory in Maryland are working on a new method for the detection of peanut allergens.

Shefcheck et al. (2006) have described how peanut protein in dark chocolate can be identified and measured using LC-MS analysis of selected unique markers for the peanut allergen Ara h 1. They also maintain the method can easily be modified to detect other food allergens. Further details are available on the ACS Publications website or by contacting us.
