Lupin protein used to make non-dairy ice cream

A team of German researchers has developed a non-dairy ice cream made from purely plant-based ingredients, including lupin proteins. The product, called ‘Lupinesse’ contains high-quality protein from the seeds of blue lupin and is completely free of lactose, gluten, cholesterol and animal proteins and fats.
The company producing and marketing the new ice cream, Prolupin GmbH, is a spin-off company to the Fraunhofer Institute for Process Engineering and Packaging IVV in Freising, Germany. The company cooperates with a lupin-growers’ initiative sponsored by the German Federal Ministry of Education and Research and involving a total of 14 partners.
