Further research into non-coeliac gluten intolerance

A study looking at the activity of the intestinal microbiota in healthy individuals shows that it is modified by gluten intake in the diet. The results showed the incorporation of gluten in the diet increases the activity of a gluten proteolytic activity in the faeces. The study also showed the presence of faecal glutenasic activity increased proportionally with the levels of gluten intake in the diet.
The research was conducted on a small group of healthy individuals under four diet regimes; a gluten free diet, plus the same diet with increasing levels of gluten supplementation.
