Do not compromise on allergen management

A European food industry expert has warned manufacturers that when looking to cut costs during the financial recession, it is important not to compromise on food safety, including allergen management, as it could be extremely costly in terms of the impact on long-term brand image.
Jamie Weall, Consultancy Services Director at FoodChain Europe, says that while sourcing alternative suppliers with cheaper raw ingredients and additives may be an attractive way to save money, new suppliers must be fully evaluated and not just assessed on price. Weall has reminded industry that a thorough risk assessment needs to be conducted before any product or operational changes are made, to ensure they are appropriate and do not jeopardise safety and legal obligations.
