Analysis of multiple nuts in food

A bicarbonate buffer-based extraction method for the simultaneous analysis of five nut allergens using liquid chromatography-electrospray-linear ion trap-tandem mass spectrometry [LC-ESI-LIT-MS(2)] has been developed and validated by researchers in Italy.
The method has been validated for detecting allergens Ana o 2 from cashew-nut, Cor a 9 from hazelnut, Pru 1 from almond, Ara h3/4 from peanut, and Jug r 4 from walnut in breakfast cereals and biscuits. Linearity, limits of detection (LOD) and quantitation, trueness and precision were evaluated on breakfast samples enriched with a mix of the five nuts. The methods were also successfully applied to the analysis of nut traces in commercially available breakfast cereals and biscuits.
