Allergy Awareness catering manual on sale

The UK Allergy Catering Manual was published in February 2005 with input from the UK Food Standards Agency, the Anaphylaxis Campaign and the Culinary Academy. The authors of this manual have also published an Allergy Aware Schools Catering Manual, and are currently offering it for sale at a reduced price until the end of October 2010.

The books provide details on a range of aspects relating to food allergy including an overview of what food allergy is, the foods that cause reactions, how to deal with those reactions and how to prepare food which allergic customers or school children will be able to eat. There is also guidance on how to train staff to understand the problem, as well as the legal implications relating to allergen management requirements in the UK catering industry.
