Allergen Management book published

A team of allergen managers in Australia have authored a chapter of the book 'Allergen Management in the Food Industry' that was published by Wiley in August 2010. Together, Fiona Fleming, Kirsten Grinter, Kim Leighton, Kevin Norman, Chris Preston, and Maria Said worked on the chapter 'The Challenges of Precautionary Labelling' that appears in the book aimed at food scientists, processors, regulators, inspectors, and policy makers.

A total of nineteen chapters are divided across four sections in the 624-page book. The sections cover Food Allergy and the Consumer, General Principles for Allergen Management and Control, and Processing Foods Free from Specific Allergens, and Allergen Risk Assessment and Risk Management.

The book's editors, Drs Joyce Boye and Samuel Godefroy, are both long-term leaders of food allergen research programs in Canada. Dr Boye leads a comprehensive research study in plant protein research and food allergies at the Centre of Agriculture and Agri-Food Canada, while Dr Godefroy is the Director General of the Food Directorate in the Health Products and Food Branch of Health Canada. He has led the food allergen method development program at Health Canada since 2001.
